The Food Biz: Fox made of stone

West Nashville bar promises more than simply pub grub

A few months ago I told you about The Stone Fox, a promising pub and music venue that was in the works for the stretch of West Nashville north of Charlotte Pike known as The Nations. Last week, The Stone Fox opened its doors, and the food has turned out to be a lot more ambitious than typical pub grub.

The Stone Fox is the project of Elise Tyler and her brother, William. Both are well-known figures around town: She’s the 28-year-old entrepreneur and social activist who helped found Halcyon Bikes; he’s an acclaimed guitarist known for his work with Lambchop and Silver Jews as well as his solo efforts.

Music is an important component at The Stone Fox, with shows scheduled two to three nights a week. But according to Elise Tyler, The Stone Fox is a neighborhood hangout with a wider mission of community fun, with plans for film screenings, dance parties, karaoke and trivia.

And for Tyler (whose Twitter handle, amusingly, is @SnackElise), the goal of delivering good food is especially dear to her heart. She hired chef Bridget Russell, who honed her skills working in diverse kitchens including Tayst, Saffire and Hog Heaven. Russell shares the Tylers’ interest in locally sourced ingredients and working toward sustainable practices.

So, for example, The Stone Fox’s burger is made with grass-fed beef from a regional farm. Not utterly surprising, but more remarkable is the Reuben: The pastrami is cured in-house, and it’s topped with their own kimchi, along with a tangy sauce made in house using a dash of spicy sriracha — all served on local marble-rye bread from Provence.

Vegetarian dishes are well-represented — the BBQ Nachos, for example, come either with pulled pork or what Elise Tyler described as a shockingly tasty vegetarian option, braised jackfruit. Both versions include white cheddar sauce, avocado and jalapenos, served atop house-made tortilla chips.

The pub fills a 100-year-old house that has been a dive bar for decades; over the summer it was gutted to the studs and rebuilt as a cozy hideaway. There’s a full bar, and the draft beer list leans toward locally brewed favorites.

Continuing the sustainability theme, The Stone Fox has an adjoining garden that supplies veggies and herbs.

The menu, which includes sandwiches, entrees and sharable snacks, is available for perusal at thestonefoxnashville.com, and Tyler said the kitchen is starting to ramp up seasonal specials.

Launched just a week ago, The Stone Fox is open only for dinner during the week, but on weekends it opens at 11 a.m. and is touting a bloody Mary brunch on Sundays.

The kitchen closes at 11 p.m., but as a true neighborhood hangout, the bar stays open until 3 a.m.

If you’ve been watching and wondering about the establishment rising in front of Frugal MacDoogal’s and across from Flyte at Eighth Avenue and Division, we have a few details.

It’s Pour House Nashville, subtitled “Burgers, Bourbon and Brews.” It’s an intriguing building, with a deck on the roof adding extra seating for dining under the sun or stars. The chef is Darrell Manhold, a Macke’s veteran who’s charged with creating a menu to complement the restaurant’s roster of craft beers and multifarious bourbons.

One thing promised on their Facebook page: a burger called The Big South, a rambunctious assemblage of hand-ground sirloin, fried egg, bacon, fried green tomato, bourbon-glazed onions and pimento cheese.

More exotically, there’s the burger called The Orange Blossom Special, topped with orange marmalade, bourbon-caramelized onions, melted brie, Tennessee orange blossom honey-glazed apple slices and arugula.
